I’m getting ready to leave Spain next week, so I too have made a chicken, potato and cabbage soup. It’s a clear stock, no milk or cream - but I can report it tastes just as good cold and well sprinkled with fresh chopped chives! Makes an easy lunch with a chunk of fresh ‘integral barra’ - rough translation 100% wholemeal baguette. I think your soup looks as if it would taste just as good cold.

Ah, the reason I used leeks was because the onions were manky - so if you have a decent onion or two, use that.
